My pool has switched to a 50M long course config for the summer.
What does one do with 25M intervals in a long course pool? My thoughts are to turn them into 50s and cut the quantity in half.

If you’re not using one of those swims, the next option is to literally stop and rest halfway across. That’s not always practical (or courteous).
Finally, your idea is exactly right, cut everything in half.
